Today was a nice day, so we opened a bottle of KOCHIRA Shinsei 😀.
I've had most of the Niimasa Colors, but this is the first time I've had the all-black label Suiboku 😀.
I've heard that it tastes better if it's aged for a while, so I aged it in the freezing cellar for more than a year😇.
I could not feel any aging at all, in fact, the taste was rather beautiful and I could feel the fresh yeast and wooden vat feeling 😇.
I knew that Shinmasa is a great sake 😀.

Personally, I like Shinshu Kamerei and Jikin more among the pre-sake, so Shinmasa might not need that much courage to open the bottle 🤣.
I can't open a bottle of 🐢 without a bigger reason 😅.
