After the Nigorinpic, the clear sake that has accumulated is released 🤣. Today, we will open a bottle of Tatenogawa's New Year's sake 😀. It's a bit off the time of the year 🤣. Actually, I was hesitant to drink this sake until now because I heard that Maru-san drank it before and found the acidity too harsh 😅. I think the acidity of 2.3 with white malted rice is pretty harsh😅😅. So I prepared a side dish of fried hamo with ume plum paste and shiso leaves 😀. It's supposed to be a winter sake, but I got a little ahead of the summer in Kansai 🤣. It is true that the Jun Dai Nishitsu had a pronounced acidity, but it was perfect for the entrée and was delicious 😇. The information on sake-no-wa is helpful even to the preparation in advance 😀.
