ヒラッチョ
Stewed royal fern with herring as a side dish.
This is a local dish of my hometown.
The unique richness added by the herring is irresistibly delicious.
I really wanted to pair it with Niigata sake, so after work I visited the sake corner of Yodobashi Camera in Shinjuku's west exit, where I found the perfect bottle of Chojamori's Senman Choja.
It was smooth at room temperature and had a light but subtle flavor.
It is smooth at room temperature, light but with a hint of umami, bitterness and acidity in a good sense.
It warms up nicely when heated.
It does not fall apart when heated to lukewarm or even hot.
Reasonably priced, with all the virtues of Niigata's evening sake.
It was probably the first sake I ever drank from the countryside, and I may be compensating for the fact that I've been used to drinking it since I was in high school? I may have been compensated for the fact that I have been accustomed to drinking it since I was in high school, but I once again felt the depth of its nostalgia.
