As is the case every year, this time of the year is a bit of a slog due to a flurry of public and private events, so it's rare for me to be a bit tired. 😮💨
It will be a little while before I have the time to relax physically, so I'm going to do a mental reset first 🍶.
I opened this bottle, which Maru-san, Luteltemi-san, Yasubey-san, Jay & Nobby-san, and others had given me recently.

The aroma of cool and clear rice, the slight carbonation that can be felt on the tongue, the fresh sweetness and umami, and the lingering aftertaste that echoes with a scene, and finally the slight bitterness that can be felt on the tongue in two stages.

The aroma of rice that gives a sense of coolness, the soft and gentle umami that permeates the body with a fresh mouthfeel, and the lingering aftertaste that finishes and spreads deeply and leaves a mineral sensation on the tip of the tongue.
As others have mentioned, the soft and gentle umami and minerality are delicious.
The entrée was "Sagoshi Tataki" and "Sashimi 3-Piece Platter" which were caught at Echizen Port.
This is the first time to drink sake at home. 🏳️
I'm slowly making progress on the second round of my national conquest 😁.
The fourth photo is a dish that came out of a pork cutlet nabe set meal I ordered at a local restaurant the other day.
I was surprised to see a dish called "katsunabe" (😲), which is udon noodles cooked in a pot with pork cutlets.
