This is the first time for Masayo a.k.a. Gagakuyo.
I will start with white sake without drinking the standard.
I like white sake.
As the store owner said, it is not that vigorous, so opening the bottle was smooth.
It has a melon aroma and a light sweetness. Sourness, little bitterness. When mixed with lees, the acidity increases and the bitterness retracts.
There is a slight shuffle.
Oh, man, it's so good!
I heard that Tenryohaii Sake Brewery was started by a young master brewer named Kato-san, who bought the brewery and started the business.
And Kato-san's notebook is easy to read and very interesting. What a genius! That's my impression.
Sake brewed by a challenging and hardworking genius.
I like sake more and more.

I can't read Gagakuyo and Yukishita is hard to read, but Kato-san's writing is indeed easy to read!
I love reading the production logs of each brand when it is released in the brewery, which can be read by registering on line at Tenryohaii Shuzo, very interesting 😊.
