The fruity pineapple-like aroma, firm rice flavor, and plump sweetness spread sizzlingly with a small amount of acidity, leaving a lingering sweet rice flavor with a slight alcohol tanginess and bitterness, and then it finishes quickly and smoothly.
It is rich and sweet, but the bitterness in the latter half balances it well, and the lingering aftertaste is long and deeply delicious. It is good as a mealtime sake or on its own.
On the second day, the umami of rice can be felt more and it tastes even better.
On the third day, the sweetness and umami are well balanced and it is mellow and delicious.
It went well with a bowl of seared and marinated tuna and amaebi (sweet shrimp) with shrimp miso soy sauce, as well as a bowl of tio soup with seared shrimp shells.
