This time it is a super-harakuchi junmai from Hitakami. I made oden with octopus from Sanriku, I wanted to open a bottle of Hidakami that goes well with fish and shellfish. This super dry junmai is made with Hitomebore sake. At room temperature. The top aroma is modest, but it has a sweet aroma. It has a mild mouthfeel. The soft, full-bodied sweetness and umami spread quietly, with a calm acidity and bitterness that is crisp and clean. When heated, the flavor profile becomes even clearer and the sake tastes great warmed up. Oh, it's so good! A sake to keep on hand! It's labeled "super dry, I thought it would have a spiciness to it, but it didn't. I thought it would be a bit spicy, But it is a slightly dry sake with a mildly umami taste. As one would expect from Hitakami, I wanted to eat sashimi after taking a sip. I would like to eat sashimi after drinking one sip. Let's have some sashimi later 💕. Oden and hot sake, happiness 😊.

Good evening, Mamio. I want another bottle of Hidakami ultra-harsh Junmai, it's so good! I don't think I've ever heard of chikuwabu, it's a hard food to explain. My partner is also from Kansai, but he learned about it when he lived in Tokyo and now it's his favorite food.
