Last weekend, as expected, I woke up at 4:30 a.m., came to work at 6 a.m., and left late at night every day, but I was able to finish my work successfully. 😮💨
I took the day off after work to get in shape by going to physical therapy and sweating it out at a super public bath, and then I will have a "moon-viewing party tonight" to look back on the October full moon [beaver moon] that passed during my hard work: 🌕️🍶.
On such a night... Junmai Ginjo Yamame Nama Shu

Apple-like aroma like Shinshu sake, juicy flavor and minerality, and then it finishes with a pleasant aftertaste and a lingering bitterness on the tongue.
［Tsuki no Oubai]
A cool, refreshing aroma of rice, a firm umami flavor on the palate, followed by a pleasant aftertaste and a lingering minerality that lingers on the tongue.
The freshness of the unpasteurized sake, but with a more robust umami than expected, is intoxicating.
For the entrée, we served "sliced raw fish" and "Miyagi yagara sashimi". When it is hard to predict what kind of fish will go well with the sake, the "sliced raw fish" with plenty of different types of fish is reassuring 😋.
