The Daishichi in the middle of the fourth picture. This is the sake that triggered the memory jump in TL at the end of last year. Daishichi Junmai Namaishige Mature Nama Shuzake. It was so good that I couldn't find it even after searching ......, but I saw it on my TL when I was at a sake event in Abeno Harukas and saw that Neemuchi-san had mentioned it on his TL. I thought, "This is close, isn't it?" So I got it: ✌️ The well-known "Daishichi Sake Brewery" is a major sake brewery in Fukushima. But to be honest, I'm not very good at it. Except for the sake at the end of last year and this one. It has a rich texture with a standing aroma and a strong ashiness, and when you drink it, the freshness and the rich rice flavor itself coexist. If the last Kaiharu was "Classic Super Light", this Daishichi is "Modern Super Rich", although there seems to be some controversy. The richness of the buttery flavor spreads clearly, and the caramel nuance in the back of the bottle delights the drinker. But don't expect butter until the second day. The cold sake is also very tasty, but it should not be overlooked that the taste is even richer and richer if you remove the sake a little. Going back to the fourth picture, the Daishichi on the left is the one I don't like, and the "OldJunmai 2014by" on the right is the one that gives the impression of being still young, as if it has knocked on the door of matured sake.

Hi Wakata 👋 What I don't like is the hi-ire, and when freshness is added to the base of this one, it changes the whole ministry. Also, I think the butter comes from being brewed with natural yeast (Bodo, Namahashi...Yamahai is unknown). Please enjoy it with a glass of wine 🥂.
