100% ancient rice sake from Nishibori Sake Brewery, which makes a lot of unusual sake. It is really golden. It has been a while since I have had it, but it is still unique! It's like it's not sake at all.
The aroma is like gentle vinegar. When you put it in your mouth, it tastes very sour. It also has an astringent taste. It is like white wine.
The aftertaste, however, is not at all like that of sake, but it is strangely rice-like. The umami of grain...? Sweetness...? And the aroma is hard to describe, like freshly cooked rice... like dried grass....
It is delicious! But I can't describe it well! Someone please drink it and post your thoughts... lol
