Nusamai is a regular sake in the Goshiki Saiun series, available year-round. Using classical techniques that utilize natural bacteria, Nusamai is made from Hokkaido rice and fermented in Hokkaido's climate to bring out the local flavor. It is characterized by a breadth and depth of flavor that differs from that of a fast brewing yeast, and we are conscious of a broad approach to modern eating habits. Since the region has a long cold period, we have also taken into consideration the design for heating sake, allowing it to be enjoyed slowly in lukewarm temperatures.
The name Nusamai comes from the Nusamai Bridge, a bridge that spans the lowest reaches of the Kushiro River, a first-class river that flows through eastern Hokkaido and empties into the Pacific Ocean. The name comes from the Ainu word "nusa-o-mai," meaning "the place where the mint is located. The nusa-o-mai is the place where the inau (wooden staffs) are erected and lined up to worship the gods and perform rituals.
