Sake🍶 made by Ota Sake Brewery (Hanzo and other sake breweries), given to me by my wife's sister.
It seems to be part of a project to revitalize the town of Kumano in Mie Prefecture by inviting volunteers from the paddy field farming community to participate in the project and Ota Sake Brewery will turn it into sake.
The aroma is very gorgeous. ✨️
When you sip it, sweetness and umami attack you at the same time. The sweetness gradually fades away and the bitterness fades in to enhance the umami!
The bitter taste fades in instead, and the umami is enhanced by the sweetness. Personally, I would have liked a little more lingering flavor 🤔.
For a Junmai Daiginjo, it had a classic taste with less sweetness!
It was the kind of sake that would stand out more with seafood from Mie when served as a side dish. ☺️
