The characteristic of unfiltered sake is that it is a "freshly made" sake. It has a very deep and robust flavor.
Nama-shu without heating and Nama-shu without adding water, fulfilling both conditions.
It is lightly sweet and goes in easily.

The building was renovated from the previous owner's residence, and the location was perfect, with a view of Lake Biwa through the pine trees in the garden ✨.
The sixth type of sake was a Junmai Daiginjo from Banshu Aizan ✨😆.

The fifth sake we were offered was a special junmai, unfiltered, raw sake.
It is made from Yamada-Nishiki with a milling ratio of 60% and an alc of 17.
As you would expect from an unfiltered, unfiltered sake, it was very drinkable and spread out in your mouth 😄.
