The brewery is located in Shinano-Omachi, Nagano Prefecture, and will begin brewing sake in January 2022 with a new organization and new facilities and staff.
The name of the sake is "Omi" 😏.

My first impression is that it tastes... hard 😓 It feels very hard and has no umami... 😥.
It claims to be a food wine that leaves a minerally astringent taste, so I let it sit for a bit.
When I drank it 3 days later, it was much mellower, but still didn't have the depth of flavor 💦.
I'll have to try it again with other specs 😋.
