Today is sake day.
I missed out on the fireworks, so I decided to open a bottle of another special sake that I recently bought at the hot UTAGE.
It's a new brand of Kaze no Mori, which was also at the concert.
The color is a slightly cloudy lemon gold. The aroma is soft sweet and sour. Mr. Ohashi, who is a master of wine, said "aloe yogurt" and it was exactly right.
Unlike Kaze no Mori, this wine is not fizzy.
When you drink it, the bitter, sweet, and sour taste is well-balanced, just like a lemon, and because you don't feel the alcohol, it has a gentle richness.
I think the slippery texture from the ultra-hard water also contributes to the mildness.
The taste tends to be sweet with acidity and modern. It is a mellow sake with a different vector from Kaze no Mori, which is closer to Soukou.
Even though it is a maiden work, it has a high degree of completion and we are looking forward to the future releases.

【Mizuhana 甕仕Komi Zerogou
This is the first sake brewed under the Mizuhana brand, and it reproduces the brewing technique of Shorekiji Temple in Bodhiyama, Nara, as described in "Goshu no Nikki", a brewing technique book written in 1489. It was brewed in a large jar of 300L, which was a brewing container at that time.
