Purchased at Inamuraya in Hokuto City (I finally got there - ❣️) A liquor store in Yakumo-cho commissioned the brewer of "Yukino Kayasha", Saitoya Sake Brewery, to brew this sake for the revival of Yakumo's local sake. It seems to be brewed with local Yakumo rice and water. The rice used is Hoshi-no-Yume from Yakumo and Yamada-Nishiki of unknown origin. As for the brewing water, Yakumo water is just delicious ‼️ I can't go there these days, but I used to stop by Yakumo Beverage on my way home from Hakodate to get some water. I had such high expectations for this sake, It is delicious without any favoritism. It has a lighter taste than Snow Kayasha, with a refreshing sweetness. The acidity is well balanced with a lingering bitterness. I'm a confirmed repeat customer. ❣️
