Sake from Abashiri, Hokkaido
Kimi ga Sode Furu Ryuhyo Roman" is a junmai ginjo-shu made by Kinpitsu Shuzo using Abashiri's brewing water. The story of the revival of the brewery's brand name, which was discontinued in the Showa period (1926-1989), at the request of the local community, is the first thing that strikes a chord. 
In the mouth, the first thing you notice is the outline of sweetness that quietly rises along with a clear, watery coolness. The sweetness is not sticky, and the taste of rice is firm. 
Then, a moderate acidity and crispness follow, settling easily without dragging on the aftertaste. 
The background of its revival by the local brewery club and sake store owners as a retro-retro brand using the famous water from Katsura-machi, Abashiri City, makes it stand out as a bottle of sake. It is one of those "sake you'll be glad you got", including the difficulty of obtaining it, which is limited to the local market.
