I saw this sake in a photo of a refrigerator at a liquor store taken by Mr. Yoohee. I was curious about it, so I bought it.
It is a small brewery with a capacity of about 40 koku. I had no idea about it until now. Sorry 🙏.
They have three brands: Ono Sakura, Haruichibanban, and Fukamori.
The new brand is Fukamori and the label is very modern.
It seems to be dry, so I chose Haruichibanji, which seems to be sweet in terms of specs.
I wonder how many of the smallest breweries in Japan exist in Japan😅.
The rice is Hidahomare.
The rice is Hidahomare. It is lightly cloudy, sweet and sour, and you can taste the flavor of rice. It doesn't taste very modern, but it is sweeter and tastier than I expected. The last part of the bottle has a strong alcohol taste.
Sake strength is minus, but it is not as sweet as the value.
Goes well with spaghetti with mushrooms 😋.
Fukamori is more dry, but I wonder if the sake quality is more modern?
After a few days, the sweetness and acidity become more pronounced and it's delicious!
