I saw this brand at Hikone Castle last year and was curious about it. I saw it for sale at an antenna store I stopped by the other day, so I went and got it 👐.
When I opened the bottle, the aroma was like brown sugar, black vinegar, and bitter chocolate.
The mouthfeel is round and soft. It is dark and bitter with an acidic astringent taste, but the softness and brown sugar-like sweetness give it a moderate balance that is not too heavy.
It is not rough and is full of the mellow flavor of rice. However, the bright stimulation of acidity and the crisp sharpness are just the right amount of saltiness.
It is a delicious wine that is easy to pair with meals ✨.
I wondered if "Doukan" was that Ota Doukan... but it turns out that the Ota family made this very sake 🧐.
