Its representative brand name, "Tousho," comes from Nikko Toshogu Shrine, and the brewery's philosophy is to brew sake with harmony and sincerity. Oyama, where the brewery is located, is blessed with abundant underground water from the Kinugawa River system, and the soft, pure brewing water gives the sake a gentle taste. Tousho Junmai Ginjo One-Time Hiire" is an all-Tochigi junmai ginjo brewed with Tochigi rice and Tochigi yeast. As the name suggests, it has a soft aroma reminiscent of "spring sunshine.
