The smell is of koji? unrefined? I wonder if it is koji or unrefined sake. It is derived from raw materials 🤔.
It has a good balance of umami and sweetness, with a touch of astringency at the end.
I thought it tasted somewhat similar to Eiko Fuji 🤗.
