A little bit matured, with a mature taste. It has a slightly chocolate carmelized taste.
Another brand, Isseiichikai, is made from Yamada-Nishiki polished to 33%, and I wonder if they like highly polished rice.
Speaking of which, I heard that Yamadanishiki does not melt well these days, and Sakahomare melts better.
Sakahomare is a recent breeding, a cross between Yamadanishiki and Koshinoshizuku, and will be commercialized in 2021.
