Yamazui by Yanagisawa Forestry Co.
We happened to meet a sake brewer at a souvenir shop at Kappa Bridge in Kamikochi, Tokyo, tasting and selling this 🌸.
The company, which runs a forestry business in Matsumoto, Shinshu, expresses the blessings of the mountains of the year in their sake.
Thankfully, we will have some!
The aroma is clean and refreshing, like a perfumed pear.
When you drink it, you can feel the minerality in your soft mouth 🍶 Not too sweet, not too spicy, but refreshing and delicious. ❗️
The third photo is wood chips given to us by the brewery. The wood smells really good!
