I can only express my gratitude to the many people in the Sake-no-Wa community who support us by drinking Noto, Ishikawa, and Hokuriku sake. As I was in charge of only a small part of the logistical support work, it was difficult for me to drink at home. I feel the importance and gratitude for the ordinary, everyday life. Today is my first day off in two weeks, so I went to visit some of the liquor stores that have been taking care of me on a regular basis. I stocked up on Noto sake, including sake from outside of the prefecture, in the hope that it would help the sake community. I'll introduce that later, but for now, here's a past drink. This is Sogen Hiyoroshi Ishikawa-mon. Sogen, which boasts of having the largest stone value in Okunoto, has a large number of items. Ishikawa-mon is usually a very crisp sake, but as one would expect from Sogen, it was mellow and soft, with a strong umami flavor. According to the Ishikawa Sake Brewers Association, 10 of the 11 breweries in Okunoto have given up production for the current season. I will do my best until Sogen comes back.
