Newly established brewery in the neighboring city of Hachioji. I was able to drop by at the right time when I passed by near Hachioji Station. There is no sake brewery in the city adjacent to Tama City where I live, so I had high expectations.

The aroma is fresh ginjo aroma of summer grass and cooked rice.
Thick delicious acidity and moderate bitterness. Slightly sweet and spicy. It is also pungent and delicious. 😋😋😋😋
The gasiness is subtle. The alcohol content seems higher than the website's 16%.

The price is high for a four-pack bottle with 59% polished rice.
However, although it is a small brewery, the fashionable storefront and bottle shape, the method of selling unfiltered, unfiltered, undiluted sake in bottles upon order, and the use of rice and water produced in Hachioji, all add value to its survival in a region with a large population but no sake breweries.
