Today I went on a business trip to Iyo Saijo, Ehime Prefecture. The front desk clerk of the hotel where I stayed recommended this restaurant. Ishizuchi sake is the perfect accompaniment to simmered kijihata grouper and conger eel tempura. This sake is named after the famous water "Uchinuki" in Saijo. The first taste is refreshing with a hint of sourness, and it goes down the throat well and is well-balanced overall. In a word, it is a "beautiful sake. It is an excellent match for white meat fish.
