I bought a bottle when I visited the brewery 🍾.
We were given a tour of the brewery and were able to hear many valuable stories about the toji in the past 😆.
It was a great learning experience. 🙇♂️
Here is the sake.
Sake rice is 100% Yamadanishiki
The color is clear.
The aroma is a faint scent of pineapple.
It is not too sweet and has a subtle, deep aroma.
The taste is slightly sweet. Soft and clear sweetness.
The mouthfeel is as refreshing as water, and the taste is mild and smooth.
The fragrance is also very subtle, with a hint of ginjo aroma.
It is an elegant and harmonious sake with a refined perfection.

Purchased after tasting at the brewery.
There is a tang of alcohol, but it is immediately soft and juicy, with a sweet citrusy acidity🍊.
The taste is strong, but it has a sharpness that quickly falls to the back of the tongue. ❗️
It goes really well with sweet simmered dishes 👍
