Review of the Collection 62 This is another bottle that I bought at the Mukou Sake Brewery during a one-day trip to Chichibu. This is the one I personally liked the most at that time among the ones I was able to taste! The words "light and refreshing sake," "refreshing cold sake," and "slightly dry and smooth," say a lot in a few words. The aroma is quite light! It only has a faint aroma of grass and grains. I like it this way. The aroma is very "so-called sake," and although Bukko-Masamune itself is a dry sake brewery that makes its sake with hard water, this "so-called" feeling may come from the image of the name, lol. However, what is interesting is that it is as smooth and easy to drink as the description says. From the moment you drink it, a moderate amount of acidity comes out and stays until the end. The sweetness, which may be due to the alcohol or the sake itself, is gently apparent until the middle part of the bottle. The spiciness finishes off with a spiciness. It is a good dry sake with just the right amount of umami. Sawanoi is also good at this kind of sake. It could be described as an old man's sake, but the acidity is more in line with modern meals. This is good!

Review 61 of the warehouse This GW I decided to visit Chichibu City in Saitama Prefecture. This is because the Seibu Line was holding a stamp rally for sake breweries along the Seibu Line. Visiting the brewery, I enjoyed the quaint building, friendly shopkeepers, and fun drink comparison tasting zone. You can also drink the spring water behind the building, which is rich in minerals. They say that the taste is dry because it is made with this water. I bought this cloudy sake after being told that "our nigori is easy to drink. In fact, it is very easy to drink! It is not sweet, but the nigori flavor adds to the flavor, making it very mild on the palate. Combined with the 14% alcohol content, it was easy to drink. There is no acidity and no fruity aroma. There is no acidity, no fruity notes, and if anything, no fizz at all. There is nothing modern about it, but it's amazing that such a rugged sake can be drunk so smoothly and settle in the stomach one after another. I drank it with Chinese stir-fry, but I think it would go even better with something a little darker....I'm sure it would be delicious with mapo tofu! To be honest, I finished it before I could write my thoughts. I want to drink it again, so I'm going to buy some more!
