It is a Happo Junmai sake, made from pure rice with a pure yeast yeast yeast structure.
It is so refreshing and easy to drink that if you drink it with your eyes closed, you may think it is sparkling wine, but it is also full-bodied and would go very well with carpaccio as well as sashimi!
