Following yesterday's Nabeshima mood: ☺️ This is the first time I've had the raw Kitashizuku from Nabeshima. Kitashizuku is a Hokkaido sake brewing rice following Hatsushizuku, Ginpu, and Comet. The quality of the sake is soft and refreshing with little bitterness, and is said to be a good combination of Ginpu and Comet 🤔. It is a Junmai Daiginjo brewed with a 40% polished rice ratio, and is only available in limited season. The appearance is warm crystal. The nose has a fruity upfront aroma of sweet apricots, fresh yellow apples and quince, with citrus nuances of acidity at lower temperatures, which fades as the temperature rises. It also has a rice aroma, like that of freshly ground rice. It has a smooth mouthfeel, with a soft fruity and wasanbon-like sweetness that mixes with the acidity along with a beautiful umami. From the mid-palate, the sweet fruity overtone leaves a sweet and umami taste on the tongue, while the acidity gently rises to the back of the throat with a slight stimulation and a hint of bitterness. The lingering finish is long, with a slight bitterness, but it is sharp and does not linger. At low temperatures, it is fresh, clean, and pure, but as the temperature rises, the stimulation of acidity and bitterness can be felt. Well, a beautiful taste with a sense of quality. ☺️ It is a pure dagin. I might try it heated later 🍶.

Good morning, Aladdin 😀 I'm glad to hear that my favorite drinks, both natto and nabeshima, share the same taste as Aladdin's 😇. But in my case, I could only describe it as beautiful, sticking out from the fruity Nabeshima 🤣.

Hi Rafa papa 😃. It is indeed a beautiful sake that would go well with kaiseki or kappo Japanese cuisine 🍶. I drank it with a very junky food item I bought at Hanshin department store, a large fish cutlet and nigiri tempura 😅.

Hi Yasbay 😃 No really I think we probably have similar criteria for buying alcohol😊. Everyone has their own sensory evaluation of the taste and other aspects of sake, so I too am very much referring to Yasbaye's and Orin's impressions: ☺️

Hi Pon 😃 I love Nabeshima, I can't resist when I see it 😅. My thoughts on heating it up might be on Instagram 🤔🙇🙇. It's definitely a fusion of north and south 😳 On the other hand, I'd like to try something like Sanzen Sakura brewed with Yamadanishiki from Itoshima: ☺️
