This is my first sake from Shimane 🍶.
According to the website, no filtration, at most one time fire-fermentation, stored at -5℃ (distributors are also required to keep the temperature at -5℃😳), no blending, no sales except to distributors.
We always want to be a sake with the style of a champion.
This is a very hard-core sake brewery!

Dry sake with bitterness as the main taste: ❗️ hard-core ‼️
No sweet and tasty elements at all: ❗️
As a lover of sweet and tasty sake, this should not be my favorite flavor,
But for some reason, I don't find it to be my weak point at all.
It is a strange taste that makes you keep drinking it as if you were bowing down before the king.
It is indeed a sake from Shimane, the land of the gods 😐.
It's hard to describe, but it's delicious 😋.
I served it chilled.
The aroma is as follows.
-Aroma: Pungent and pungent
-Bitter taste in the nose.
Taste sensation
The higher the number, the stronger the taste (5 is the maximum)
-Spiciness: 3 at the beginning → 4 in the aftertaste
-Sweetness: 0 at the beginning → 0 in the aftertaste
-Sourness: 2 at the beginning → 1 in the aftertaste
-Bitterness: 5 at the beginning → 4 in the aftertaste
-Astringency: 3 at the beginning → 2 lingering
-Rice flavor: 0 at the beginning → 0 lingering 0

A new sensation! It looks hot, not spicy, not sweet. The aroma reveals that it is by bitterness and minerality. And it has a sharpness that you don't even notice! Maybe that's why it is 17.5 degrees Celsius, but it's a strange sensation to be able to drink it smoothly. A surprising sake!

Our first Shimane sake was a small bottle of Ohroku from here 😌I liked it sweet at the time 😋 but this one reminded me of my love for dry 😚.

I think the first Shimane sake would be "Oroku", I was the same 😁.
I wonder if it's because it's a place where the gods gather, so it's mainly for local consumption and there's not much of it in circulation 🤔.
