Takijiman純米大吟醸 亀の尾

This time it is Junmai Daiginjyo Kame-no-o from Takihama.
This sake was brought back from a visit to the nearby brewery after visiting Akame 48 Waterfalls in Nabari City, Mie Prefecture, back in the GW season.
I think it was a Junmai Daiginjo series, and only this one from Kame-no-o was aged 3 years? (Sorry my memory is a little fuzzy on the number of years 🙏 )
It was only fate that I came across this one 😆.
I will have it chilled.
The bottle was opened with a whistling sound, which I didn't expect.
The color has a hint of yellow.
The top aroma is of plump bananas with a refreshing muscat-like acidity. It is already beautiful.
From the fine, smooth mouthfeel, the banana flavor and light muscat acidity blend together smoothly, and the taste finishes with a slight bubbly bitterness, leaving a lingering rice taste on the tongue.
As the temperature approaches room temperature, the fullness of the flavor gently expands and is delicious.
Taki's signature dry and refreshing taste is refined and subdued,
It is a good sake with a mild sense of maturity combined with a freshness.
The common brands are good, but this is the kind of sake that should be served with Japanese courses,
I would like to include this kind of sake in a Japanese course.
The beauty of the fresh greenery and waterfalls at Akame 48 Waterfalls is so beautiful that I can't get it out of my mind's eye.
I want to go back to soak up the negative ions!
