My husband bought it at a nearby supermarket for the first time in a long time.
It is the first sake made by Kitajima Sake Brewery. It is made from rice grown in Shiga Prefecture. The alcohol content is 19%. It is stored fresh at low temperature, matured, and then fired.
It has a traditional sake aroma. It has a thick, sweet flavor. The alcohol is felt in the aftertaste.
The sweetness becomes stronger if it is not cooled down too much, but since it has a high alcohol content, it was just right for me when I cooled it down. It is a strong sake, so it is also good on the rocks. In winter, it can be served lukewarm.
It is delicious with chilled tofu and potato salad, of course, but also with eel on top of a bowl of rice or yakisoba (fried noodles).
On the tag is the brewer's thoughts, and on the bag to protect the quality is what is written in the book "Travels of Japanese Sake" by Tatsuya Naramoto. This book was first published in 1985; I would like to read what sake breweries were like more than 35 years ago.
I haven't had it in about 20 years, but I'm glad it still tastes good after all this time, and I bow to the efforts of the brewery. Thanks for the treat 🙏.
