The first bottle of the New Year is the Year of the Snake label from Imanishi Sake Brewery, Mimuro Sugi, located near Ogami Shrine. Ookami Shrine enshrines a white snake as a messenger of the god and is familiarly known as Mr. Snake.
Since I am a male in the year of the snake, I will have this one, made with wooden vat, Bodai-hashiro, and Yamada-nishiki, as a tokoso (Japanese toast).
It is served cold.
When the bottle is opened, there is a short gas sound.
When poured into a glass, fine bubbles adhere to the glass.
The color is clear and colorless.
The top aroma is of grapes and muscat, with a hint of yogurt in the background.
The mouthfeel is a bit gassy with a slight sizzle.
From the clear taste, the lactic acidity, grape sweetness, and complexity of the wooden vat and Bodhi yeast weave together to produce a delicate sweet and sour taste.
As the temperature rises, a bitter taste emerges, but it is easy to drink with low alcohol.
My mother-in-law, who is not a regular drinker, and my wife, who is not a drinker, also highly praised the taste.

Rice used: 100% Yamadanishiki produced in Nara Prefecture
Alcohol content: 13% (undiluted)
