Shinkame's Mahojin Junmai.
We have several bottles of warmed sake such as Shinkame and Saninshu that can be left at room temperature and grow without sagging, but this Shinkame Mahojin was produced in November 2013 and came to our house after 7 years at the liquor store. It has been in our home for over 2 years and is finally approaching 10 years old.
Today (21st) I was at work, but I heard that the main dish for dinner was gratin, so I came home thinking that I had no choice but to go with heated Shinkame and decided on this Mahojin.
The aroma of maturity and the hard flavor of this Shinkame was so good that I couldn't believe that it was from Ihyakumangoku.
It is a common theory that heated Shinkame goes well with cream cheese and cream croquettes, so it was only natural that it would also go well with gratin.
Tonight, too, we drank late at night after the sun had set, and it was quite surreal to be drinking heated sake late at night with gratin as a snack 😅.
Tomorrow (22nd) is my day off: ❗️

I leave it in the kitchen at room temperature.
If it is a Junmai sake with a strong structure like Shinkame or Sanin sake, it will not deteriorate even at room temperature and can be enjoyed when you forget to drink it occasionally👍.

I often leave it at room temperature. I have been doing it for a long time, but it's difficult to know when it works and when it's a disappointment.

If it's Etsukaijin or Tamagawa, I'm sure it's definitely made and can be served at room temperature, but I think it's unfiltered raw sake, so it may be different from hi-ire.
