Mr. Shimada, the young master brewer, is visiting sake shops in Osaka with sake he brewed himself, saying, "If it's good, please put it on the shelf.
He previously trained at Kuroryu in Fukui Prefecture, and now brews good sake in Osaka.
I hear he wants to hone his skills at various breweries, so we have to support him by drinking this one❗.

When I poured it into the glass, there were large bubbles on the surface.
The first impression of the fragrance is that it is most alkali...but there is a grain aroma a little bit at a time.
There was no opening sound, but the mouthfeel is gassy.
It is not too sweet for Aizan, but you can taste the graininess of the oli and the citrus flavor.
Slight bitterness and sweetness are coupled with a bitterness and a bit of spiciness at the end.
It has a sake-like taste and a tingling sensation, but it is not so spicy.
I feel youth, vigor, liveliness, and hope for the future while slumbering 😁.

95% Aizan from special A district in Hyogo Prefecture is used.
