Sake Mirai drinking comparison, so we also got Jikin's Sake Mirai 🍶.
The specifications are very similar, as it is a junmai ginjo brewed with 100% Sake Mirai and polished to 50% rice ratio.
The alcohol content is only 0.5% lower than Jikin.
The appearance is clear crystal with yellow tints.
The aroma is mild, with a hint of sour passion fruit-like ginjo aroma.
When you sip it, the flavor is centered on a mild acidity, starting with a light sweet umami taste, which is followed by a subtle sourness and a soft finish.
When it is rolled and allowed to air dry, the sweet umami becomes a little more pronounced and is in good harmony with the acidity.
Toward the end, there is a slight bitterness nuance that does not linger.
Perhaps it was because the Jikkomai was from the day the bottle was opened and the Hanayu was from the fourth day, but I felt that the Hanayu had a more open aroma and flavor that came out better.
The only way to see the changes after opening the bottle is to buy it yourself or go through it day after day, both of which are quite difficult 😓.
I would like to compare it with Akabu and other sakamirai.
