It is a junmai ginjo brewed with "Yamadanishiki" produced in Kasai City, Hyogo Prefecture, which is grown under contract.
The aroma is soft and gorgeous, similar to that of pineapple or apple, and the mild, slowly spreading, strong sweetness and umami...followed by a hint of bitterness.
The crisp gassiness that is only possible with fresh sake can still be felt the next day, with a slightly subdued rice flavor and subtle hints of apricot and plum.
