I couldn't get No. 6 for a long time.
I finally decided to open a bottle of this sake that had been waiting in the cellar.
The glass still has thin bubbles on it.
It still has thin bubbles in the glass and feels a bit chippy.
But the fresh acidity and fruitiness has calmed down too much, and the sweetness is all over the place.
It was a pity that the sharp acidity typical of Niimasa rounded out too much and gave a somewhat blurred impression.
However, it was not that it was not tasty, but the creamy texture was precious.
However, I feel that it would have been better to drink it a little earlier at our house.
It went better with pizza topped with shiso than with Japanese food.

Thank you ma-ki-😊I'm glad I was able to take the plunge as I couldn't quite find the opportunity to open the bottle. I was surprised that the bubbles were still firmly in place.
But I wish I had opened the bottle at least a year ago.

Thank you, Ao😊I'm the one who can't open a bottle of Shinsei without something else 😂The shiso strangely tightened up the flavor of the rounded sweetness, which was a bit bland unfortunately 😋.

Pon, thank you 😊I was able to enjoy the deep sweetness, but perhaps the temperature control was poor, I could not feel the unique sourness too much and it felt blah. Next time I'll drink it right away🤣.
