I know it's a bit past, but February 2nd is my sakewa registration day😊It's been 4 years since I got hooked on the sake swamp! (My 380th).
On such an anniversary, I thought I'd open something I don't usually open, so I'm opening a bottle of Colors' best Ash!
The bottle is black and the label is printed in iridescent colors. It reminds me of the rare stickers of Bikkuriman chocolates that I used to collect as a child.
I had a bottle of Niimasa Suiboku (Ash) 2021, a junmai made from pure rice in a wooden vat.
The aroma is typical of Shinmasa, but it is stronger than usual colors, and has a green apple-like fruity flavor.
In the mouth, a refreshing sweetness spreads over the palate with a hint of green apple, followed by a touch of astringency like after eating citrus fruits, and then it finishes cleanly and smoothly.
It is delicious! Seriously delicious!
It is beyond the boundaries of sake after all 🎵.
The overall taste is sweet and sour, but while it is more astringent than the other colors, it has no sake flavor at all, and is full of a sense of transparency ❗❗
The regular price of Niimasa has gone up recently, but if I come across it again, I'll definitely get it👍!
