Nara Pref. Nara City. Kuramoto Sake Brewery Co. Bodai-zumi. Sake made from Bodai yeast, which I was interested in. And I visited "Bodai Hashiro Sake Festival" where a festival event of Bodai Hashiro is held 😄. The event is held at Shouryakuji Temple, the birthplace of sake (there are various theories), where the sake mother, called Bodai Hashiroshi, is brewed at the temple. Rice is steamed in lactic acid fermented water called "Soyashimizu" and tasted while being exposed to the unique fermentation aroma of cheese and yogurt 🤣. The aroma of the upper part of the bottle has a very subtle cheese aroma at the back of the bottle. It has a unique acidity and a solid sake feel that is not too robust and not too spicy. Not modern but not too classic. 500 yen for a tasting cup 🍶. Limited to 500 bottles a year, it was an unreasonable price to buy 😅. I was grateful to have it, thinking that this is the origin of sake in the Muromachi period 🙏. We also had 7 different kinds of sake brewed using the Bodai yeast for 500 yen (with a bowl of Kuramoto Sake Brewery's Narazuke) and a cup of sake lees soup for 100 yen each 😋. Oh! Sweet sake lees soup, yummy! I thought, but this year it was made with sake lees from Kaze no Mori's Aburanaga Sake Brewery😋. There used to be about 12 breweries that belonged to the "Nara Prefecture Bodhi Hashiwase Sake Brewery Study Group" but the number has been reduced to 7...

Good evening, Nemuchi-san. I see you went to Shorekiji Temple. I was just regretting that I missed it when I saw the news. I envy you that you experienced that unique fermentation aroma 😆 It's a pity that the number of breweries in Nara that sell Bodhi Hashiroshi is decreasing 😢.

Hi Lutertemi, I see that Bodhidharma sake is also sold in the guest halls of Shorekiji 😊I personally found the yogurt-like fermented aroma strange and not unpleasant, like I've smelled it somewhere before but I'm not sure what it was 😆.
