Even though it's kept refrigerated, the temperature is getting warmer, so it's time to open it🙇♂️I got a signature☺️ even if it's empty, I'll keep the whole bottle 😚.
I've been dragging it out so far, but it's pretty healthy and I've opened and closed it a few times.
The aroma is fresh lactic acid and lemon zest citrus, with a nigori-zake character, but quite beautiful!
It has a crisp effervescence, with a refreshing sweetness that starts with the bitterness and richness derived from the lees and then quickly dissipates.
What is different from other nigori sake breweries is the order of bitterness and sweetness. The bitterness and sweetness are in the same order, so the tongue does not get tired, and as you continue to drink, you can feel the sweetness more and you cannot stop. ☺️
I'm going to hold out for two cups and enjoy the rest in a few days 😍.
