I decided to drink this the day I was born ✨ This is a limited brewery release type of Akagisan that I bought in Gunma, Japan! It is one of the best in the series, second only to the centrifugal pure Dai. I will savor it to my heart's content! When I opened the bottle and poured it, the aroma was clear and transparent with a gorgeous apple-like aroma. The palate is clean and innocent, with a transparency like being on an ice stage. Later on, a mild and full flavor emerges with a melon-like glossy taste. The elegant flavor of Yamada-Nishiki can be felt in abundance, and in the latter half, the dry sharpness and mild acidity typical of "Akagisan" bring it all together to create a well-rounded taste! The clean, elegant "Akagisan" character and the tender flavor of Yamada Nishiki. It is truly superb ✨. Every year when I celebrate my birthday, I feel like it's the end of the year and the beginning of the New Year. Next year, I would like to drink the special Daiginjo, complete the Akagisan year-round lineup, and visit Kochi Prefecture, which I have not yet explored, to complete my 47-prefecture tour...!
