This time it is Hanakaze. I had been curious about rice and agave, but hadn't had a chance to drink it. The retro, eye-catching color lured me in and I brought it home. It is a sake that I want to open today, when the sky is clear and blue after a series of downpours. It is served cold and shaken well. It is white and lightly cloudy with fine bubbles. The top aroma is of white flowers and grapefruit. From the soft, slightly effervescent mouthfeel, the sweet and sour taste of fresh, concentrated grapefruit flows gorgeously through the mouth, and the lingering aroma of softly returning koji and the bitter bitterness of hops make it a sake that can be drunk easily. It is similar to the sake we drank at the end of last year, a collaboration between Pukupuku Brewing and Terada Honke, but I think Hanakaze is drier. It is strange that the combination of low-polished sake and hops gives it a bewitching taste like citrus juice that is hard to believe it is sake. Sake and other cultures mingle in this sake. I would like to try it with ethnic or spiced curry 😊. Oh, but it can go with bean cake without bean paste 😋.
