This is the 4th bottle of local sake I got on my trip to the San-in region 🍶. This is a local sake from Tsuwano, Shimane Prefecture 🍶I bought a total of 6 bottles on this trip, but this is the only sake I bought from the brewery 😅. I usually drink it cold at first, but this time I had it at room temperature 😁It has a slightly yellowish color, a slightly sour aroma, and a sour mouthfeel, but it was crisp and refreshing 🙂🍶🍶Now I heated it up to about 50℃🍶 and it tasted even better, The acidity was even more pronounced and the sharpness was even more pronounced 🍶. On the second day, I tried it cold, but the acidity was reduced and I felt a slight bitterness. This is a nice touch 😁. Personally, I think it goes well with heated sake 🍶🍶🍶👍

This sake is made from an original sake rice called En no Mai from Shimane Prefecture. I could not find a registration for this sake called "Hatsushin" in the Sake-no-Wawa. Is it a sake that is not widely available? It has a fresh and slightly sour aroma. It has a light mouthfeel and comes in without any resistance, with a slight sourness. What spreads on the tongue after that is the taste of dashi (Japanese soup stock) ☺️ The taste of dashi broth is like a mixture of shiitake mushrooms and kelp! I thought it would go well with Japanese food, so I had it with takobutsu (octopus), but it naturally blended with it and the deliciousness of the flavor made me say it was delicious. The sourness of the soup will increase if you let it sit for a few days. In such a case, you can smooth it out by adding something salty to it 😘.
