I've always been curious about Goshiki Saiun ☁️, a summer sake that uses white malted rice. The aroma is light citrus acidity, a little alcohol? When you drink it, it has a soft acidity and mild rice sweetness, accented by a bit of a kick of alcohol. A little muscat, too? Anyway, it is a slushy type. As the temperature rises a bit, it becomes rounder. The impression is that the acidity becomes a little more rice-like, mellow, and easier to drink.
