The rice used is Banshu Yamadanishiki Special A polished to 30%. Brewed in, what, 1988 ‼️ As expected, this is the first old sake of this age. I was excited to see how it would taste, but it did not have the sense of maturity I had imagined. It was very smooth and gentle in the mouth, but the umami component came in slowly and steadily. It has a punch, and I guess it is the type of sake you can enjoy slowly. It was a very impressive sake. ❣️
