あや
Home drinking 2024, 10th bottle.
It was the first time. When I hear the name "Takeshita Family" in Shimane, I imagine... that house. It was made by an up-and-coming master brewer, and it had a clear and somewhat dry impression. The aroma is gorgeous and strong. The sweetness is moderate, so it was very good as a food sake.
Date of production: January 2024
Rice: 100% domestic rice
Yeast used: Yeast 901
Polishing ratio: 50% for koji rice, 60% for kake rice
From the etiquette] 150 years ago, the Tabe family asked the Takeshita family to take over the brewing department. In response to the manly spirit that took care of it, we received the name of Rihachi, the head of the Takeshita family at that time. With the up-and-coming Toji Hamasaki, we once again took on the challenge of brewing sake, this time with the Tabe family. Enjoy this sake with a fruity flavor inspired by the sparkling waters of the Sea of Japan.
