It uses subsoil water from the famous mountain of Nihonmatsu, "Adatara-yama" which is said to be 40 years old.
It's one of the 100 most famous mountains in Japan, and you'll recognize it from the Onibaba of Adatagahara, the setting for Onmyouza's suite Kurozuka.
Nostalgic.
Fruity and sweet, soft and fluffy aroma
refreshing mouthfeel, and

It has a crisp bitter taste
It has a crisp bitterness and a crisp dry taste that goes away quickly.
The bitterness is mellower at room temperature than at cold.
This is also reasonably priced and delicious.
It is a good Ginjo for everyday drinking.
