I was told by the staff at the liquor store that this sake is particular about the water used for brewing.
When I drank it, I could taste the acidity and umami, but there was almost no puffiness in the mouth. I was very surprised by this. I think it is the sake with the least aftertaste that I know of. I guess you could say it has no volume. It is a very unique sake.
